Stellum Straight Bourbon Whiskey (75cl)

Stellum is a straight bourbon bottled at cask strength. It is built from three Indiana mash bills, two of them high-rye and the third almost entirely corn. Older barrels from Kentucky and Tennessee are folded in through a multi-step blending process. The nose opens with intense clove and allspice, creamy macadamia and light tobacco, then honeysuckle, green apple and nectarine. The palate begins with vanilla, marshmallow and cotton candy before turning to black pepper, cayenne and cinnamon baked apples, with tart blackberry and apricot. The finish carries candied ginger and black pepper, fading into syrupy honey.
