Stillhead Sherry Cask Rye Whisky is a 100% B.C. rye from Stillhead Distillery in Duncan, British Columbia, bottled at 50% in a 750ml bottle.
The whisky matures for several years in new American oak, then moves into once-used Pedro Ximénez casks imported from Spain for a finish. The sweetness of the sherry sits alongside the natural spice of the rye.
The nose brings dried fruit, strawberry jam, toasted rye bread and wildflower honey. On the palate there are ripe dates, blackberries, brown sugar and dark chocolate. The long finish carries butterscotch, blackcurrant, raisin and sweet cinnamon.
