Sullivans Cove American Cask

A single cask Tasmanian single malt from Sullivans Cove, matured for at least seven years in 200-litre ex-Bourbon casks of American oak. It is pale gold, with no added colouring, and has not been chill-filtered. The Tasmania Distillery was founded in 1994. Its single malt is made from 100% Tasmanian barley and purified rainforest water, and distilled in copper stills of the kind usually used for cognac. The nose is restrained and warm, with chocolate, caramel, vanilla, cinnamon, barley, malt and old leather. Chocolate continues on the palate with spice, citrus and a light grain note, and the finish is long, fruity and warm with soft vanilla.
