A single cask Sullivans Cove from Tasmania, matured for twelve years in an ex-bourbon barrel of American oak. The spirit was distilled on 22 December 2008 and bottled on 6 September 2021 at 46.5%, an outturn of 260 bottles from cask TD0351. It is non-chill-filtered and has no added colour.
The bourbon cask adds toffee and caramel to a fruity character. Apple, nectarine, grape and orange with banana appear on the nose, followed by pear, peach and candied pineapple on the palate, set against clear oak spice. The finish keeps juicy fruit and spice, with vanilla and a creamy texture.
