Sullivans Cove – American Oak Second Fill Single Cask TD0059 (70cl, 47.6%)

This is a Tasmanian single malt from Sullivans Cove, drawn from a single second-fill American oak cask, TD0059, and bottled at 47.6% ABV in a 70cl bottle. The cask was filled in November 2005 and decanted in May 2021, giving 414 bottles. It is made from 100% Tasmanian malted barley and distilled in a custom-built copper pot still called Myrtle. The nose is peach skin, vanilla pod and light floral honey. On the palate there is golden apple, sponge cake and toasted American oak. The finish is dry and lingering, with white pepper, charred wood and fading stone fruit sweetness.
