Sullivans Cove – American Oak Second Fill Single Cask TD0089 (70cl, 46.9%)

This is a single cask Tasmanian single malt from Sullivans Cove, bottled at 46.9% ABV in a 70cl bottle. It comes from a second-fill American oak cask that had previously held an earlier Sullivans Cove whisky. The cask was filled on 29 March 2006, and the whisky was bottled in 2020 in a run of 428 bottles. It is made from Tasmanian malted barley, distilled in the pot still known as Myrtle and matured in Hobart's coastal climate. The nose is vanilla bean, soft citrus and white blossom. The palate shows caramelised peach, sponge cake and a hint of almond. The finish is long, with dry oak spice, floral lift and gentle malt sweetness.
