Sullivans Cove American Oak Second Fill Single Cask TD0199 is a Tasmanian single malt from a 300-litre American oak cask seasoned with Australian tawny. The cask was filled on 15 June 2007 and the whisky matured for 12 years before being decanted in October 2019.
It was not finished: it spent its whole maturation in the ex-tawny cask. Only 479 bottles were drawn, at 47.5% ABV, from 100% Tasmanian malted barley.
Peach, vanilla and bay leaf lead the nose, followed by cardamom, golden fruit and toasty oak on the palate. The finish is long, with soft tannins, dried apricot and wood spice.
