Sullivans Cove – American Oak Tawny Single Cask

This is a single cask whisky from Sullivans Cove, matured in American oak that previously held Australian tawny port-style fortified wine. Its character sits between the distillery's French and American oak styles: caramel, vanilla and bright woodiness from the oak, with dried fruit and molasses from the fortified wine. The nose has molasses, biltong, oiled leather, smoked sea salt, honey roast ham and apricot syrup. On the palate come plum jam, charred banana and treacle toffee, with cinnamon and spice, and a viscous texture. The finish brings clarified butter, chocolate truffles with fleur de sel, cigar smoke, Brazil nuts and toffee apple.
