This is a single cask Tasmanian single malt from Sullivans Cove, matured for seven years in a 225-litre French oak cask that previously held Tasmanian Pinot Noir. It was distilled in August 2017 and bottled in September 2024 at 46.1% ABV, unfiltered and unflocked. Cask SC0387 gave 379 bottles.
The nose brings walnuts, eucalyptus, ginger, blackcurrant jelly and crème de cassis, with old tobacco box and sandalwood. The palate is silky, with lime cordial, crème brûlée, raspberry jam and coconut. The finish is long, with fine oak grip, briny character, anise, mandarin pith, dark chocolate and white pepper.
