Sullivans Cove – Old & Rare American Oak Second Fill Single Cask 16 Year Old Single Malt Whisky TD0252 (70cl, 48.2%)

A single cask 16 year old single malt from Sullivans Cove in Tasmania, matured in a single 200 litre second-fill American oak ex-Bourbon cask. Cask TD0252 was bottled at 48.2% and yielded 195 bottles. Second-fill casks are refilled American or French oak barrels, which give a gentler oak profile. Here the oak is pronounced but refined, and Huon pine adds an alpine freshness and a herby note. Expect deep leather, charred corn and sizzled butter, with warm spices and fruit. The finish brings earthy baking spices, cedar and coffee grounds.
