Sullivans Cove Old & Rare HH0499 is a 17 year old Tasmanian single malt from a single American oak ex-bourbon cask. It was distilled in 2000 and bottled in 2018, with the cask filled on 27 September 2000. The cask yielded 121 individually numbered bottles, and this is bottle 91. It is bottled at 47.6% in a 70cl bottle and is non-chill filtered. It forms part of the distillery's Old & Rare series. The nose is vanilla bean, ripe apricot and soft caramel lifted by seasoned oak. The palate brings crème brûlée, stewed peaches and nutmeg on a velvety base. The finish is long, with oak spice, brown sugar and dried fruit.
