Sweetens Cove 2021 Release (75cl, 56.5%)

Sweetens Cove 2021 Release is a cask-strength blend of straight Tennessee bourbons aged 4, 6 and 16 years, bottled at 56.48% in a 750ml bottle. The whiskey was distilled at Cascade Hollow, the Tennessee distillery best known for George Dickel. Marianne Eaves blended barrels from a mashbill of 84% corn, 8% rye and 8% malted barley, and the bourbon is bottled without chill filtration. The oldest barrels bring depth and tannin, while the younger ones keep grain sweetness. It is the brand's second annual bottling. The nose is caramelised sugar, charred oak, baking spice and apple peel. On the palate come toffee, dark cherry, cinnamon and seasoned wood, with a dried citrus note. The finish is long and warming, with spice, oak tannins, honey and clove.
