Takamine Koji Whiskey is an 8 year old Japanese whiskey made with the Takamine Process, which uses koji, a traditional Japanese mould, to convert starch to sugar in a way similar to malting barley.
Koji and yeast work at the same time in a multiple parallel fermentation, rather than the yeast being added after a warm water mash. The 100% barley ferment is double distilled, then aged in virgin oak and ex-Bourbon casks, which give the spirit its natural golden colour.
