The gravelly, calcareous soils give it structure and minerality, while steel ageing preserves aromatic freshness and a short time in wood may add complexity without masking the fruit. It shows golden apple, white peach, delicate floral notes and light buttery, vanilla nuances, with a harmonious palate, pleasant acidity and a persistent finish. It suits fish, shellfish and white meat.
