Terralta Blanco Tequila (75cl, 40%)

Terralta Blanco is a tequila from Destileria El Pandillo, near Jesús María in the Jalisco Highlands, made by third-generation master distiller Felipe Camarena and introduced in 2011. The one change he made to the family method was the water: Terralta uses only deep well water drawn from around 150 metres underground. The 100% Blue Weber agave is grown in the Highlands for eight to ten years, slow-cooked in a stone oven, crushed with a stone tahona wheel, fermented in stainless steel with natural yeast and double distilled in copper stills. The nose shows cooked agave, wet stone and light pepper. On the palate come slate, earth and subtle pepper, followed by a crisp citrus finish.
