That Boutique-y Whisky Co. Cotswolds 3 Year Old (50cl, 50.4%)

A three-year-old English whisky from the Cotswolds distillery, bottled by That Boutique-y Whisky Co. in a 50cl bottle at 50.4% ABV. It is one of 1783 bottles. The distillery uses only barley grown in the Cotswolds, and all of its malt is floor-malted at Warminster, at what is described as Britain's oldest working maltings. Fermentation runs for just over 90 hours, which gives time for fruity compounds called esters to form, a method credited to Dr Jim Swan.
