This is an 8 year old Canadian corn whisky, bottled by That Boutique-y Whisky Company as part of its core range. It was matured entirely in Oloroso sherry casks and bottled at 45.8% in a 70cl bottle.
It comes from small batches of about 1,000 litres, is non-chill filtered and keeps its natural colour. Sherry and the sweetness of corn are at the centre of it, with dried fruit, buttery oak and warming spice.
The nose offers baked muffins, buttery oak, raisins, prunes and dates, then runny toffee. The palate shows toffee, vanilla wafer, popcorn, cooked peach and cracked black pepper. The finish is long and sweet, with dried fruit and dark chocolate.
