It has been finished in casks that previously held Pedro Ximenez sherry. Pedro Ximenez is a white Spanish grape variety whose sun-ripened fruit gives an intensely sweet, dessert-like wine.
On the palate it is described as grape peel, mandarin and fig with bright oak, a subtle oiliness and honeyed sweetness. The finish is gentle and lingering.
