This is The Dalmore 40 Year Old, a Highland single malt bottled at 42% ABV in a 70cl bottle. It starts in American white oak ex-Bourbon barrels, then is divided between 30-year-old Matusalem Oloroso sherry casks and Graham's 1970 Colheita Port pipes before the two parts are brought back together.
The nose has cherries, plum, sultana, toffee apple and vanilla pod. On the palate come orange peel, chocolate truffle, Old English marmalade and crushed walnut. The finish is long, with Black Forest fruit, poached pear with caramel and dark chocolate.
