Mountain Pass Honey is a flavoured spirit from The Fort Distillery in Fort Saskatchewan, Alberta. It starts from the distillery's Canadian whisky and is infused with raw wildflower honey from Alberta, and it is bottled at 35% ABV in a 75cl bottle.
The honey's sweetness and floral aroma sit alongside the grain, malt and toasted oak of the aged whisky underneath.
The nose is led by wildflower honey, honeycomb and vanilla bean, with toasted malt, sweet clover and light oak spice. On the palate come hot honey, butterscotch and caramel, then soft baking spices and gentle wood char. The finish is medium in length, sweet and coating, with honey, cinnamon and toasted oak.
