The Gospel – Projects Legacy Rye Whiskey (70cl, 56%)

This is an Australian rye whiskey from The Gospel, made as a tribute to Andrew and Ben's love of American-style whiskeys. It is bottled at 56% in a 70cl bottle. The mash bill is 59% Mallee rye, 35% Australian corn and 6% Australian malted barley, with the un-malted rye grown on a single farm in the Murray Mallee region of South Australia. It was double distilled, in the manner of Maryland style ryes, then aged for 3 years in a heavy toast, high char cask in the middle of the bond store. The notes are orange marmalade, lemon curd, toasted cedar, burnt toffee, fig and leatherwood honey.
