The Macallan – Harmony Collection Phoenix Honey Orchid Tea (70cl, 43.9%)

This is the fifth edition of The Macallan Harmony Collection, a limited annual series built on collaborations with chefs, connoisseurs and artistic creators. For this release Macallan worked with the tea purveyor JING, and the whisky is bottled at 43.9% in a 70cl bottle. It was inspired by Phoenix Honey Orchid, an Oolong tea. Most of the whisky was aged in sherry-seasoned American oak, giving peach, floral and honey notes reminiscent of the tea. Sherry-seasoned European oak adds rich, roasted notes and a touch of tannic astringency, and bourbon casks bring a final sweetness. The presentation box is made from paper produced from waste tea leaves.
