The Macallan Harmony Collection Phoenix Honey (70cl, 43.9%)

Phoenix Honey is a Speyside single malt from The Macallan's Harmony Collection, bottled at 43.9% ABV in a 70cl bottle. It takes its inspiration from Phoenix Honey Orchid, a tea from JING with dessert wine aromas and exotic fruit notes. Most of the whisky was matured in sherry-seasoned American oak, which gave fruity and floral flavours. Sherry-seasoned European oak adds roasted richness and a touch of astringency, and a small share of ex-bourbon casks adds a final sweetness that echoes the tea's dessert wine character.
