The Nine Springs 4 Year Old PX Pedro Ximénez Intensely Peated Edition (50cl, 58%)

The Nine Springs Intensely Peated Edition is a four-year-old single cask whisky from Eichsfeld in Germany, bottled at 58% in a 50cl bottle. It is limited to 440 bottles. It matured throughout in a single cask that previously held Pedro Ximénez sherry, filled with new make distilled from heavily peat-smoked barley malt. The nose is described as intensely smoky and fruity-sweet, with medicinal notes, dates wrapped in bacon, Lapsang Souchong, cellar apple and tinned pear. A little water brings out the tinned pear, alongside earthy, wet-leaf notes.
