The Nine Springs 9 Year Old Pedro Ximénez Single Cask (50cl, 46%)

This is a nine-year-old single cask single malt from The Nine Springs in the Eichsfeld region of Germany, bottled at 46% in a 50cl bottle. The outturn is 1,300 bottles. The whisky spent four years in ex-bourbon casks, then a further five years in a former Pedro Ximénez sherry cask. The nose is fruity and complex, with tinned pear, honeydew melon, gooseberry jelly and sultanas, alongside white chocolate, crème brûlée, and a background of cinnamon and a little cardamom. The palate is creamy and gently sweet, turning drier later and recalling banana leaves. The finish is fruity, ending in a quiet, dry aftertaste.
