The Representative 4 Years Old Barrel Proof Straight Bourbon Whisky (75cl, 57.4%)

A barrel proof straight bourbon bottled at 57.4% ABV, distilled in Indiana and bottled in Bardstown, Kentucky by Proof and Wood. It is aged for a minimum of four years, which the bottler describes as two Congressional terms. It is a small batch blended from approximately 20 barrels, made from a mash bill of 75% corn, 21% rye and 4% malted barley. It is non-chill filtered, and the same mash bill is used for Proof and Wood's Deadwood Bourbon. The nose offers tree bark and crème pâtissière. Browned butter and violet appear on the mid-palate, and the earthy finish hints at licorice root, tobacco and bitter herbs.
