P.X. I Love You is a single malt Irish whiskey from The Whistler, made at Boann Distillery in Drogheda, County Meath. It is made from 100% malted Irish barley and triple distilled.
The whiskey matured mainly in ex-bourbon barrels, then spent a minimum of nine months in Pedro Ximénez sherry casks. It is bottled in small batches at 46% in a 75cl bottle, non-chill-filtered and at natural colour.
The nose is richly sherried, with raisin, sultana, dried cherry, orange marmalade, marzipan and fig. The palate is viscous and sweet, with maraschino cherry, dried fruit, walnut, leather and dark chocolate. The finish is of medium length.
