Thresh & Winnow Brandy Cask Finish is a single cask straight bourbon, distilled grain-to-bottle at KOVAL in Chicago from a mashbill of 51% organic corn and 49% organic millet.
After distilling, the bourbon is finished in KOVAL's own fruit brandy casks and bottled from a single cask at 50% ABV.
The nose offers toasted caramel and vanilla, dried fruit and oak spice, with exotic spices and a faint mintiness. On the palate, grain and soft brown sugar lead to charred oak, then raisin and stewed apple. The finish is long and clean, with caramelised sweetness, firm oak tannin and a faint fruit echo.
