Thy Whisky no. 21 is a Danish rye whisky made from malted rye, malted spelt and pale malt, with Odyssey barley among the grains. The grain was grown at Gyrup. The spirit was distilled between April 2017 and December 2018 and matured in new oak and bourbon casks.
It is a limited edition of 806 bottles, filled at 52% ABV in a 50cl bottle. Its scent is likened to flowering heather on the moorland by the North Sea, and its flavour is described as complex.
