Watershed is an Irish single malt made from malted barley, selected and bottled by Tipperary Boutique Distillery at Ballindoney Farm in County Tipperary. It was the first release from the brand to be reduced with water drawn from the family farm in the Golden Vale.
The whiskey is matured only in first-fill ex-bourbon barrels and bottled at 47% ABV, non-chill filtered and without added colour. Each release is made in small batches of six barrels.
The nose brings green apple, pear skin and vanilla bean, with honey and toasted oak. On the palate come butterscotch, orchard fruit and citrus zest, turning to black pepper and vanilla cream. The finish is medium, crisp and drying.
