West Cork Sherry Finish is an Irish single malt finished in sherry casks, bottled at 43% ABV in a 70cl bottle.
West Cork was founded in 2003 by three friends, Denis McCarthy, Ger McCarthy and John O'Connell: two former fishermen and a food developer. They brought in two advisers, Dr Barry Walsh, formerly a master blender at Jameson, and Frank McHardy, formerly master distiller at Springbank.
The team uses fresh spring water from the nearby River Ilen, and the grain is grown in Ireland and malted by hand on site.
