This is a 9 year old Canadian whisky distilled at Still Waters Distillery in Concord, Ontario, and chosen by the independent bottler Whisky For Us. It is a single cask release in a 75cl bottle.
After nine years of maturation it was finished in a Brazilian Amburana oak cask, a wood known for baking spices. The finish adds sweet cinnamon, tonka bean, gingerbread and toasted coconut to the Canadian grain base.
The nose is spicy, with cinnamon stick, ginger snaps, tonka bean, vanilla and maple syrup. The palate is oily, with graham cracker, brown sugar, nutmeg and baked apple. The finish is long and warm, with gingerbread and subtle coconut.
