WhistlePig The Beholden is a 21 year old single malt whisky made from 100% malted barley and bottled at 46% (92 proof). It was released in Spring 2023 from 18 barrels.
The spirit was copper-pot distilled at Glenora Distillery in Nova Scotia, then taken to WhistlePig Farm in Shoreham, Vermont. It matured for 21 years in ex-bourbon oak barrels and was finished in WhistlePig rye casks.
The nose has baked red apple, golden raisins, candied citrus, cherry, maple syrup and cinnamon. The palate is smooth and buttery, with butterscotch custard, black cherry and apricot, then rye spice, dark cocoa and nutmeg. The finish is long and dry, with charred oak, maple praline and a delicate touch of smoke.
