A single malt from the White Oak Distillery in Akashi, Hyogo Prefecture, made by Eigashima Shuzo and bottled at 46% in a 750ml bottle. It is a pot-still whisky distilled from imported Scottish malted barley, and it is non-chill-filtered.
The cask range is unusually wide: Pedro Ximénez, Cream and Oloroso sherry, new American oak, ex-bourbon, brandy, wine and shochu casks.
The nose brings ripe yellow apple, honey, floral tones, vanilla and a hint of sea air. The palate is soft and medium-bodied, with apple, citrus and pine nuts, and a touch of smoke. The finish is moderate, clean and lightly mineral, with vanilla and dried fruit.
