The Vaults is Widow Jane's yearly bourbon release, and the 2025 edition is the seventh. It is a blend of bourbons from Kentucky, Tennessee and Indiana, each aged for at least 15 years and assembled by hand in groups of five barrels. It is bottled at 49.5% ABV in a 750ml bottle, non-chill filtered, and 15,672 bottles were made.
The finish is in Mythological Oak, air-seasoned for one to two years and harvested from the forests of Amfilochia on the Greek coast. Widow Jane proofs it with limestone-rich water from the Rosendale Mines in upstate New York.
The nose shows dark mulled fruit, burnt sugar, salty olive oil pastries and forest aromatics, with floral and citrus notes. The palate leans towards glazed honey buns, vanilla cream, cinnamon sugar and banana bread.
