Wild Common Añejo is an aged tequila made at the Cascahuín distillery in El Arenal, Jalisco. The agave is roasted for 72 hours in traditional brick ovens, then extracted using both stone tahona and roller mill. Fermentation is natural with agave fibres left in the mix, followed by double distillation in stainless steel and copper pot stills. The spirit ages 12 to 14 months in ex-bourbon barrels, including Buffalo Trace barrels for the first batch, and is bottled at cask strength. Tasting notes include black pepper, baking spice, lemon, caramel and roasted agave, with a nose of coconut, vanilla and brown sugar.

Tasting Notes

Nose

Sweet from the start with an almost coconut-like note, followed by vanilla and brown sugar, cinnamon and a noticeable whiskey/barrel aroma

Palate

Thick and rich with excellent viscosity, coating the tongue; a basket of fruits with cinnamon sticks, butterscotch, berries, caramel, vanilla, red clay, cherry and cooked down agave

Finish

Favorite part; long and warming with lingering fruit, oak and a hint of smokiness
