Wild Life Sherry Cask Single Malt Whisky Batch 001 (46.1%)

This is Batch 001 of a single malt made entirely at Wild Life Distillery in Canmore, Alberta, from 100% Alberta malted barley. It was distilled in a 500L alembic copper pot still and aged for a minimum of four years. Maturation begins in 53-gallon ex-bourbon barrels, followed by a finish in Pedro Ximenez sherry casks from a traditional Spanish bodega. It is bottled at 46.1% ABV, non-chill-filtered and at natural colour. The nose brings chocolate-covered raisins, chewy dried figs and caramelised brown sugar. On the palate come baking spice, raisin bran and rounded malt, leading to a long, textural finish with fruit leather and soft French and American oak.
