William Wolf Rye (75cl, 46%)

This is a rye whiskey from the Netherlands, made for William Wolf Whiskey Co. at the Zuidam Distillery in Baarle-Nassau and bottled at 46% in a 75cl bottle. It is pot distilled from 100% rye and malted rye. The wash ferments for 11 days and undergoes malolactic fermentation, a technique more usual in winemaking, which turns sharper malic acids into softer lactic ones. The nose is ripe tropical fruit and dried apricot, with herbs, baking spice and white pepper. On the palate there is vanilla, pecan, orange peel and cinnamon over a toasted-grain sweetness. The finish is medium-dry and smooth, ending slightly peppery.
