Wilson & Morgan 25 Year Old Sherry Cask Malt 1993 (53.7%)

A 25-year-old sherry cask malt from Wilson & Morgan, distilled in 1993 and bottled in 2018 at 53.7% ABV. It blends malts from two Speyside distilleries with a little unpeated malt from Orkney, and was matured in a second-fill Oloroso sherry cask. Second-fill wood stops a long Oloroso maturation from becoming overpowering. After 25 years the oak has added a fruity character and a winey dryness, while the aroma of the spirit remains intact. The nose is described as mineral, with honey and beeswax. The palate is delicate and honeyed with a crisp note of sour fruit, then herbs, pepper and winey tones. The finish is long and waxy.
