Ailsa Bay is a single malt Scotch whisky bottled at 48.9% in a 70cl bottle. Its maturation begins with a process the distillery calls Micro Maturation. New make spirit goes first into small Hudson baby Bourbon casks of between 25 and 100 litres, where it spends six to nine months. The small size allows rapid, intense maturation. The whisky is then moved into virgin, first-fill and refill American oak casks for several years.
