Baker's 7 Year is a Kentucky straight bourbon from the Jim Beam Small Batch Collection, bottled at 53.5% (107 proof). This is the older small batch version, made before the brand moved to single barrel bottlings.
The brand, first released in 1992, is named after Baker Beam, grand nephew of Jim Beam. It is made with a jug yeast strain the Beam family has kept for more than 60 years, and it matures for at least seven years in charred new American oak.
The nose is sweet, with corn, maple, caramel, toffee and vanilla over dark fruit and a touch of spice. The palate is rich and oily, with toasted oak, dark chocolate, cinnamon and clove, and the finish is long and warming.
