Balcones "1" is a Texas single malt and the first release from Balcones Distilling, which Chip Tate founded in 2008 in a former welding shop in Waco. It is made from 100% Scottish Golden Promise malted barley, put through an extended fermentation and distilled in double-batch copper pot stills in small runs.
It is bottled at 106 proof, or 53% ABV, without chill filtration. Texas's hot summers and sharp seasonal swings speed the interaction between spirit and barrel.
