Balcones Baby Blue is a Texas corn whisky made from 100% blue corn, bottled at 46% in a 75cl bottle. It is pot distilled in copper stills at the Balcones distillery in Waco.
The whisky is aged for less than two years in new American oak barrels with a medium char. Slow fermentation and a careful distillation cut are used to bring out the sweetness of the blue corn.
The nose is usually described as buttered corn bread, vanilla custard and fresh pastries, with a hint of tropical fruit. The palate has roasted corn, butter toffee, cinnamon and toasted nuts. The finish is medium to long, with baking spices and toasted corn.
