Dúbailte is a double distilled Irish single malt from Ballina, matured in a combination of bourbon and Oloroso sherry casks.
The nose is light, with a honeyed sweetness and notes of green apple, pear and honeydew melon. The palate is medium-bodied, starting with vanilla fudge and butterscotch before moving into classic sherry notes of raisins and dried fruit, with warming spice and a subtle nuttiness.
The finish is warming, with walnut and honey that linger.
