Bibi Graetz Testamatta 2020 Toscana Rosso IGT (75cl)

Testamatta is a Toscana Rosso IGT from Bibi Graetz, made entirely from Sangiovese grown on old vines. The 2020 vintage draws on six vineyards: Vincigliata, Olmo, Londa, Lamole, Montefili and Siena. Each is picked in several passes, up to eight, so the grapes come in at the right ripeness, and are sorted again in the cellar before destemming. Fermentation uses native yeasts in open 225-litre barriques for the smaller parcels, and in 50hl barrels or steel vats for the larger ones. The newer Olmo vineyards, at 420 metres, added freshness to this vintage, and a warm season with cool nights kept the acidity and aromatic character high. The nose combines strawberry with a little vanilla, recalling strawberries and whipped cream, and the wine is marked by its freshness.
