Caol Ila – 2008-2021 13 Year Old Duncan Taylor Octave Cask (70cl, 54.2%)

A 13-year-old single cask Caol Ila from Islay, distilled in 2008 and bottled in 2021 by Duncan Taylor. It comes in a 70cl bottle at a natural cask strength of 54.2%, without colouring or chill filtration, and is one of 90 bottles from the cask. The whisky spent three months in one of Duncan Taylor's small sherry octave casks, which added dried fruit and depth. Before the octave, the notes list ashy wet stones, fresh oysters, sweet peat and salt. After it, they list candied lemon zest, olive brine, sourdough toast, salted nuts and faint grass smoke.
