Cape Byron – Pedro Ximenez Handfilled Australian Single Malt Whisky (70cl, 50%)

Cape Byron Pedro Ximenez is an Australian single malt whisky matured in Pedro Ximénez sherry oak, in a 70cl bottle. Each bottle is filled by hand. It comes from a single cask, without standard filtration or proofing, and is bottled at 50% ABV. The nose brings dark chocolate, sticky raisins and dried figs. The palate has plum pudding, roasted walnuts and intense syrupy sweetness, and the finish is long, warming and spiced.
