Chateau de Pellehaut Blanche d'Armagnac NV

This is an unaged Armagnac from Chateau de Pellehaut, distilled in the Ténarèze appellation on a travelling still. It is made entirely from Folle Blanche. It is traditionally served chilled as a palate cleanser between the fish and meat courses, a custom known in France as a 'Trou Gascon'. It also works in cocktails in place of pisco. The nose is very expressive, with honeysuckle, purple flowers and pastry crust. Peppermint and lemon zest on the palate fade into a lingering finish of burnt sugar.
