Cleveland The Eighty is an American bourbon from Cleveland Whiskey in Ohio, in a 70cl bottle. It is made with the distillery's own technology in place of conventional maturation.
Rapid changes in pressure and oxygen enrichment are used to control the ageing, and heat is applied together with charred oak segments, which give the bourbon its flavour and colour. The mash is 51% corn, with undisclosed proportions of rye, wheat and barley.
