Cotswolds – Founder's Choice Cask Strength English Single Malt Whisky (70cl, 60.4%)

This is the first Founder's Choice single malt from Cotswolds, an English whisky in a 70cl bottle at 60.4% ABV. The spirit is creamy and fruity, from two yeasts, a 90-hour fermentation and a tight heart cut on the spirit still. It was diluted to 63.5% ABV for filling into American oak STR barriques. After just over three years, Dan selected nine casks for this batch. The whisky was bottled at natural cask strength, non-chill filtered and with no added colouring. The nose brings dry hay, cut wood, dark chocolate, dried figs and plums in syrup. The palate is warming, with cereal, toast, plenty of fresh red fruit and butterscotch. The finish carries spicy oak, dried fruit and a lingering dry, nutty note.
